In Morocco, tea is not something you drink alone. Sweet mint tea — atay — is the heartbeat of hospitality, poured for guests, for family, for anyone who crosses the threshold. To refuse a glass is unthinkable; to be offered three is an honor.
The pour itself is theater: the host raises the pot high above the glass, sending a long ribbon of tea splashing down. It aerates the brew, builds a delicate foam on top, and — not incidentally — shows a little flourish for the guest.
